Our all-new outdoor bar & terrace has launched in partnership with the exciting Discarded Spirits and takes ingredients that would otherwise have become waste, and turned them into something worth celebrating.
Discover our signature cocktails such as the Discarded Espresso Martini, Discarded Pineapple Negroni and more, alongside a menu of delicious snacks with the environment in mind.
Each cocktail at The Discarded Terrace uses ingredients that were once wasted, now treasured.
Starting with the stars of the show, the Discarded Spirits, which include the Discarded Grape Skin Vodka, Discarded Banana Peel Rum and Discarded Sweet Cascara Vermouth, each made using items that would have been thrown away.
The award winning sprits are combined with clever opportunities to save ingredients that would otherwise be wasted, such as the leftover pineapple rinds being used in our Discarded Pineapple Negroni or the spent coffee grounds which is turned into our very own coffee liqueur for the Discarded Espresso Martinis.
For the peckish, guests can enjoy a selection of sustainable specials which will be on rotation depending on what produce and ingredient opportunities present themselves on the day.
Items will include the "Kale and 20 step herb garden rosemary chips", "Locally sourced pulled chicken tacos with coleslaw and local herbs", "Jackfruit burger with harissa and onion jam" and more. Executive Chef Kuljit Singh cares so much about knowing where his ingredients came from, he even planted his own herb garden next to the terrace.
